Potato salad with fennel
Potato salad. There are so many different variants for sale, but I prefer to make it myself. And that is super easy and much tastier in my opinion. Use lots of fresh herbs and just make your own sauce. Leave it in the fridge overnight to let the flavors soak in even better. If you have a party, you just make a number of different salads the day before and you don't have to worry about anything on the day itself. The fennel gives this salad a delicious anise-like taste. My husband describes it as minty. Whatever you want to call it, together with the fresh tarragon and the other fresh herbs, this potato salad with fennel is really a great salad! For a large bowl of potato salad with fennel you will need:
- 2 fennels
- 600 grams of potatoes
- 250 grams of ham cubes
- 4 onions
- 3 hard-boiled eggs
For the sauce you will need:
- 4 tablespoons of mayonnaise
- 4 tablespoons yogurt
- 6 sprigs fresh golden dragon
- fresh chives
- fresh parsley
- 1 teaspoon of mustard
- sea salt/pepper
And this is how you make the potato salad with fennel recipe:
-Peel the potatoes first and cut them into small pieces. You clean the fennel by removing the outer leaves and then also cutting them into small pieces.
- If you have a steam oven like me, you can steam the vegetables together in about 10 minutes. If you don't have these, put the potatoes and fennel in a pan and cook them with some salt for about 10 minutes.
-Take a bowl for the dressing. Chop the fresh herbs finely and put them in the bowl and add the rest and mix it all into a nice sauce.
- Cut the spring onions into thin rings and boil the eggs. These must be hard-boiled eggs.
-When the potatoes and fennel for the potato salad are ready, add them to the bowl with the sauce and the rest of the ingredients and mix everything together. Place in the fridge for at least an hour to allow the flavors to infuse.
