Just before Christmas I posted the recipe for a scroppino. That is a spoom recipe with alcohol, because it uses prosecco. A spoom is a type of drink made from foam and syrup and often used as a dessert or as a drink in a champagne glass. It is a typical drink in Belgian and Dutch cuisine. This time we make an alcohol-free raspberry lemon sorbet ice cream scoop.
The concept remains the same. Actually, a spoom is a drink that you drink between courses to freshen up your taste palette. But making this spoom as a mocktail on a Saturday night, I wouldn't say no to it.
This drink is not only refreshing and delicious, but also completely plant-based. We use lemon sorbet ice cream instead of ice cream. Lemon sorbet ice cream is made from water, sugar and lemon juice and contains no animal products. It is therefore a vegan type of ice cream that fits perfectly with this summer drink. To finish the drink, we pour sparkling water.
I chose Spa sparkling water with a flavor, because it gives the drink that little bit extra. Spa has different flavors of sparkling water, such as lemon, grapefruit and mint. You can choose which flavor you like best with the lemon sorbet ice cream.

Making this spoom hardly takes any time at all, just put the ice through the blender and pour it. Anyway, I love lemon, and the soft sorbet ice cream makes the drink silky smooth. So alcohol-free drinking doesn't have to be just a simple splash.
We just dress it up nicely with some fruit on the side. If you want to make this non-alcoholic raspberry lemon sorbet ice cream spoom even more exciting, you can also blend some basil in the blender. The basil gives a fresh, aromatic and spicy taste to the spoom.

Ingredients:
- 8 tablespoons lemon sorbet
- 300 ml sparkling water - for example spa
- 10 raspberries - from freezer box
- 10 blueberries - on a skewer
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Put the ice in your blender and add 100 ml of sparkling water. Blend to one "foamy" whole.
- Place the skewers with the blueberries in the glass and place a few raspberries on the bottom.
- Pour the mix from the blender into the glasses and top up with some sparkling water.
- Decorate with some crumbled raspberries and serve.
