Cake or cookie? It's a bit of both as far as I'm concerned, this almond flour pumpkin spice apple cake. Perhaps because it is flat and has a slightly different structure than a regular yellow cake. Whatever it is anyway, it's tasty! And also made very easy. When I bake there is often some left over, or it is just too much for me. The neighbors are then willing testers, because they regularly receive some of my baking. In this recipe I used agave syrup, which is of course just sugar. So the cake is not sugar-free. And of course you don't have to, sometimes we can make a treat for ourselves. Keep an eye on the cake while baking. Not all ovens are the same and sometimes things go a little faster. I baked this cake the first time with a combination of two types of flour, but I didn't like it. Sometimes it takes some testing to see what works, but the result is now satisfactory.
You can keep the cake in the fridge for 2/3 days, so you can enjoy it longer. If you are like me, you can keep a nice snack for a few days.
This makes it ideal to treat yourself to something sweet whenever you want. After all, a little self-care in the form of a piece of cake can be very nice and put a smile on your face.

Ingredients:
- 200 gram almond flour
- 50 ml agave syrup
- 1 el pumpkin spice spice mix
- 2 eggs
- 1'' call
- 10 amandelen
- 2 tl baking powder
- 60 ml olive oil
- ½ lime - squeezed
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat your oven to 160 degrees.
- Take a bowl and grate 1 apple into it. You can leave the skin on. Then squeeze the lime juice over it.
- In another bowl, sift the baking powder, add the eggs, olive oil and agave syrup and beat it with a whisk until nice and foamy.
- Add the almond flour, the pumpkin spice and add the grated apple. Mix well and then spoon into a small baking tin lined with baking paper.
- Cut half the apple into wedges and place them in a circle on top of the batter with the almonds around it.
- Bake the cake in the oven for about 40-45 minutes, use a skewer to check.
- Let it cool for a while and then: Delicious Bites!
