A chowder is a type of soup thickened with a roux. It is real comfort food and very well known in America. In this case we make a mussel chowder with delicious Zeeland mussels. We all know the history of the country and the people who settled there. This soup was thus also introduced into the country by both the French and the English. The content of the soup will therefore also differ per region. So many cultures also means so many different influences on the recipes. American richly filled clam chowder
So many countries so many dishes. Every country has a few recognizable dishes. For America, that's definitely a chowder soup. But also definitely a clam chowder. Of course, plenty of fish and seafood is also caught in the seas around the country in America. A chowder soup like this is therefore also suitable for other types of fish than just the mussel.
So you can also make a nice fish stock. And then you add tasty pieces of fish to this soup. By the way, it is not a “light” meal because the roux and cream contain quite a few calories. This American richly filled mussel chowder is really the main meal. With its creamy texture and delicious taste, this chowder is an absolute treat for lovers of good, hearty meals. The combination of fresh seafood, vegetables and herbs creates a flavor explosion that makes every spoonful a pleasure.

- 2 kilo Mussels - (1 large bowl)
- 2 big carrots
- 2 white onions
- 3 stems celery
- 1 small can of corn kernels
- 3 toes Garlic
- 3 twigs fresh chopped parsley
- 150 ml chardonnay
- 250 ml cooking cream 35% fat
- baguette
- 2 twigs thyme
- 1 twig rosemary
For the roux:
- 25 gram butter
- 25 gram flower
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Clean the carrots and chop them into cubes, the celery into thin slices, the onions finely chopped, the garlic cloves finely chopped. Drain the corn kernels. The thyme leaves and rosemary rise from their sprigs. Finely chop the parsley.
- Take a large pan, heat it and add oil, put all the vegetables and herbs from above in it. Bake for 5 minutes and deglaze with the wine. Leave on low heat.
- In your saucepan, melt the butter for the roux, add the flour and cook for a minute or two. Turn off the heat and let the roux stand until use. (It is now light brown and it is a kind of paste).
- Rinse the mussels under cold water and discard any that are broken or open. Place them in a large saucepan and add 500 ml of boiling water. Cover the pan and cook the mussels for 5 to 7 minutes.
- Drain the moisture from the mussels in another pan, we will use this to make stock. Let the mussels cool and remove from the shell. Toss the empty shells in the pan with the mussel water. Boil this water with the empty shells for about 10 minutes. Drain the liquid and save. The shells may now be discarded.
- Pour the cooking cream into the mussel stock and stir. Add some of the roux and stir, repeating until you get a soupy soup.
- Add the mussels and vegetable mix and mix well. You should now have a kind of thick lobe soup. Sprinkle in some freshly ground pepper and stir again.
- Serve with a piece of baguette.
