I recently attended Susan Aretz's book presentation. She presented her third cookbook “borreltijd”. Susan is what you might call a culinary jack-of-all-trades. With her online platform Smulpaapje, she knows how to help many mothers and fathers with nice things recipes for kids and fun tips for eating out with kids. I regularly meet Susan at events and we often raise our glasses to life. Of course, a recipe from her book could not be missing from my site. So let's get started with this apple mixed nuts and chicory salad. Salad with apple and nuts
By the way, this is a recipe from Yvette van Boven, also a topper from “the bizz” with an enviable career! You know her from “cooking with van Boven” on TV. A wonderful no-nonsense cook with good products and little frills. Something I like myself. Unfortunately due to a late delivery from the supermarket to my home, I completely adapted the recipe to the things that were still in my fridge / pantry! So nice and zero-waste and completely approved here because the bowl went empty!

Of course I hope to have done both ladies honor with this recipe. For credit where credit is due! In this recipe we use ricotta. Ricotta is low in fat and salt. So it is a fairly mild cheese. The word ricotta means "cooked again". Strictly speaking, it is therefore not cheese, but a by-product of cheese. Namely, it is made from the whey left over after it has been separated from the curds to make cheese. Also a “waste product” that has been given a nice second life in this way.
If you want to give this salad a bit more of a tangy flavor, you could replace the ricotta with a soft goat cheese that you can find at your local cheese shop. These substitutions will not only add a fresh, tangy touch to the salad, but they will also add a creamy texture that will pair wonderfully with the other ingredients. Additionally, you might consider adding some fresh herbs like basil or dill for an extra layer of aroma and flavor that will really make your salad stand out at your dinners or lunches.

Ingredients:
- 150 gr bulghur - (soaked in 300 ml boiling water)
- 100 gr mixed unsalted nuts
- 200 gr ricotta cheese
- 3 el walnut oil
- 2 apples
- 2 stumps chicory
- 100 gr rocket salad
- 2 lemons
- peper
- sea salt
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Set up a pan with 300 ml of water and bring to the boil, or use your quooker and pour the boiling water into a pan. Add the bulgur (wheat grains) and put the lid on the pan. Soak for 10 minutes.
- Roast the mixed nuts in a frying pan for a few minutes. Then finely chop them on a cutting board.
- In a bowl, mix the ricotta with 2 tbsp lemon juice and lemon zest from half a lemon. Season with salt and pepper and stir in half of the mixed nuts.
- Make a dressing from the 3 tbsp walnut oil, juice of 1 lemon, pepper and salt.
- Cut the chicory stalks lengthwise into thin strips and do the same with the apples. You can peel them but you don't have to. Drizzle the juice of half a lemon over the chicory and apple to prevent them from turning brown.
- Add the arugula to the salad and pour over the dressing and mix well. Let stand to marinate.
- Add the soaked bulgur to the salad and add the ricotta mixture. Mix well and sprinkle with the rest of the chopped nuts.
