Fancy some deliciously fluffy and healthier pancakes for breakfast or brunch? These apple cinnamon quark pancakes are easy to make and full of flavour. Perfect for a weekend start! Here, we usually work out first and then have breakfast, so it can almost be called brunch. And this quark egg pancake recipe is perfect for that. Making them doesn't take that much time either. If you want to vary this recipe, you can do that with the quark. For breakfast, I made delicious pancakes with apple and cinnamon.

In this case I chose vanilla quark that fits perfectly with the taste of cinnamon and apple. Because this is a somewhat healthier version I didn't use any sugar, but you could sprinkle it on top at the end. Well enough knackered to get started with this apple cinnamon cottage cheese pancakes.
Tips for the tastiest quark pancakes
This recipe is very easy to adjust to your own taste. For example, you can experiment with different types of flour, such as buckwheat flour or spelled flour. If you're in a crazy mood, you can also add natural food coloring to the batter. For example, you can make pink pancakes with pink pitaya powder, or green pancakes with spirulina. This gives the pancakes some color and extra nutrients.

These apple cinnamon cottage cheese pancakes were so good at my house, because they are deliciously sweet and airy. Do you want to make more? Then double the recipe to two apples. You can also store the pancakes for later, because you can also eat them cold. Then take them to work for a healthy lunch, or eat them as a snack with some honey or jam.

Ingredients:
- 100 gram vanilla cottage cheese
- 1 Jonagold apple - (or other sweet apple)
- 1 ei
- 50 gram flower
- ½ citroen - squeezed
- 3 el butter
- 2 el cinnamon powder
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Peel the apple and core the apple with an apple corer. Cut the apple into thin slices and put them in a bowl. Sprinkle with the lemon juice and some cinnamon powder. (You can also sprinkle some sugar on top).
- Take a bowl and add the quark, the egg and the flour and beat with a whisk until you get a smooth batter.
- Heat your frying pan and put a little butter in it, pass a few rings through the batter and make sure there is batter on both sides. Place them in the pan and fry until golden brown on both sides. Repeat until all rings are used up. I got about 10 rings from this quantity.
- Sprinkle some cinnamon on the apple pancakes.
