Make a delicious salad with just a few ingredients. That sounds good right? You can eat this recipe asparagus potato salad with avocado dressing both lukewarm and cold. It is vegetarian and is made that way. Delicious with your main meal, but also to take to work. If you add some lime or lemon juice to the dressing, it won't turn brown. Avocado turns brown quite quickly, and of course we want to keep it fresh green in color.

To make it even easier for myself, I buy pre-cooked baby potatoes from the fresh shelf. Then you only have to cook them for 10 minutes. You could also use regular baby potatoes with the skin on. You can just eat that. Green asparagus are easier to obtain all year round than the white version. But if they are in season, you can also make this salad with them.
A great way to add extra flavor to your salad is to add a fresh poached egg. The delicate process of poaching ensures that the egg yolk remains wonderfully soft. When you carefully cut open this egg while it rests on top of the salad, a magical moment occurs.
The rich, golden egg yolk will slowly drip over the salad and mix with the dressing, making every bite a true flavor explosion. The contrast between the warm, velvety egg yolk and the fresh, crispy salad is truly fantastic.

Ingredients:
- 300 gram baby potatoes - cooked
- 400 gram green asparagus
- 4 eggs - hard-boiled
- 2 twigs Parsley - finely chopped
For the avocado dressing:
- 1 avocado - peeled and pitted
- 1 citroen - squeezed out, its juice
- 4 el yoghurt
- peper
- salt
- 50 ml water
- 1 tl ras el hanout

And this is how you make it:
- Boil the baby potatoes and blanch the green asparagus. The potatoes may be cooked, the asparagus may still have some bite!
- Boil the eggs, peel and cut into pieces. And chop the parsley.
- Put all the ingredients for the dressing in a food processor or blender and whiz until you have a nice smooth sauce.
- Put all cooked ingredients in a bowl, add some dressing and toss well.
- Delicious bites!
