Ok ok I'll be honest... I'm super bad at cooking the perfect egg! And that is caused by the fact that I forget that an egg is boiling. Rarely do I set my kitchen timer, and then suddenly after a few minutes I change my mind. Well, how long have they been up? And how long will they have? Just to be on the safe side, I let them cook a little extra, with very hard-boiled eggs as a result. In this recipe I give you the tip for perfectly cooked eggs with nice soft egg yolks! Preparing the green asparagus is also an egg, they only need to be blanched for a short time. This asparagus recipe for asparagus salad with mint dressing fits perfectly on your Easter table. But also at other times. green asparagus salad
Asparagus salad with mint dressing
And then we didn't even mention the dressing in this asparagus recipe! It really makes your salad as far as I'm concerned. And in this case we add a surprising ingredient. Perhaps not something you would expect very quickly, namely:
Parmesan cheese. I learned to eat this before in France, where they also served their salads with this kind of dressing. Preparing the green asparagus is very easy, but pay attention to the thickness of your asparagus. In this case I bought very thin ones, if you have the somewhat thicker version you will also have to blanch them a little longer.
Here you will find the complete recipe with all the ingredients you need. I hope you have fun preparing the dish below.

- 4 eggs
- 400 gram green asparagus
- 100 gram fried bacon - (ready-made from the supermarket)
- 1 el cress
- 50 gram Parmesan cheese - in thin slices
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Let's make the dressing first. Grate the Parmesan cheese with your microplane grater. Place all ingredients in the blender except the olive oil. Turn until you have a smooth sauce, then add the oil. Turn again and then pour everything into a glass bottle. Set aside until use.
- Place a large pan on the stove and fill it with water and a pinch of salt. Blanch your green asparagus in this. (A minute or 3/4 for the thin version, a minute or 5/6 for the thicker version.) Scoop them out of the pan and let drain.
- Put the eggs in the water and cook them for 6,5 minutes! Then scoop them out of the pan into a bowl of ice water. To do this, literally put a few ice cubes in a bowl of water. Let the eggs cool in it.
- Place the asparagus in a large bowl and add the fried bacon, Parmesan cheese slices and cress.
- Peel the eggs and carefully cut them in the middle. Place them in the bowl and drizzle the dressing over the salad. Season to taste with some freshly ground salt and pepper.
- Delicious bites!
- The dressing can be kept in the fridge for a few days.
- A microplane grater is a grater with very fine holes, everything you grate comes out almost like “snow”.
- I bought the bacon already fried from the supermarket. If you use fresh bacon, fry a few slices yourself in a frying pan.
