Ok ok I'll be honest... I'm really bad at cooking the perfect egg! And that's because I forget that an egg is cooking. I rarely set my kitchen timer, and then suddenly after a few minutes I realize it. Well, how long have they been on? And how long do they still have to be? To be sure, I let them cook a little longer, with very hard-boiled eggs as a result. In this recipe I'll give you the tip for perfectly boiled eggs with a nice soft egg yolk! Preparing the green asparagus is also a piece of cake, they only need to be blanched for a very short time. This asparagus recipe for asparagus salad with mint dressing fits perfectly on your Easter table. But also at other times.

And then we didn't even mention the dressing in this asparagus recipe! It really makes your salad as far as I'm concerned. And in this case we add a surprising ingredient. Perhaps not something you would expect very quickly, namely:

Asparagus salad with mint dressing

Parmesan cheese. I learned to eat this before in France, where they also served their salads with this kind of dressing. Preparing the green asparagus is very easy, but pay attention to the thickness of your asparagus. In this case I bought very thin ones, if you have the somewhat thicker version you will also have to blanch them a little longer.

This asparagus salad with mint dressing is a fresh and tasty addition to your Easter table or summer picnic. It combines the crunch of green asparagus with a creamy dressing and salty bacon

Perfectly cooked eggs (6,5 minutes for a soft yolk) and crispy bacon complete this dish. In just 20 minutes you can put a colourful salad on the table that is ideal as a side dish for your Easter dinner or as a light lunch on a summer day. The dressing can be kept in the fridge for a few days, which makes this recipe extra practical for meal prep.

You need:

Ingredients:

  • 4 eggs
  • 400 gram green asparagus
  • 100 gram fried bacon - (ready-made from the supermarket)
  • 1 el cress
  • 50 gram Parmesan cheese - in thin slices

For the dressing:

  • 40 gram Parmesan cheese - grated with microplane
  • 2 el French mustard
  • 1 el capers
  • 6 leaves fresh mint
  • 1 tl peper
  • 1 tl salt
  • 50 ml white aceto balsamic
  • 70 ml olive oil

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Let's make the dressing first. Grate the Parmesan cheese with your microplane grater. Place all ingredients in the blender except the olive oil. Turn until you have a smooth sauce, then add the oil. Turn again and then pour everything into a glass bottle. Set aside until use.
  • Place a large pan on the stove and fill it with water and a pinch of salt. Blanch your green asparagus in this. (A minute or 3/4 for the thin version, a minute or 5/6 for the thicker version.) Scoop them out of the pan and let drain.
  • Put the eggs in the water and cook them for 6,5 minutes! Then scoop them out of the pan into a bowl of ice water. To do this, literally put a few ice cubes in a bowl of water. Let the eggs cool in it.
  • Place the asparagus in a large bowl and add the fried bacon, Parmesan cheese slices and cress.
  • Peel the eggs and carefully cut them in the middle. Place them in the bowl and drizzle the dressing over the salad. Season to taste with some freshly ground salt and pepper.
  • Delicious bites!
  • The dressing can be kept in the fridge for a few days.
  • A microplane grater is a grater with very fine holes, everything you grate comes out almost like “snow”.
  • I bought the bacon already fried from the supermarket. If you use fresh bacon, fry a few slices yourself in a frying pan.
