Even as I write this down, the sun has just disappeared behind the clouds and the first snowflakes are falling again. Prince even once wrote a song about it: Snow in April! But also the arrival of a very different fine season. Namely the asparagus season and that's why I'm sharing a very nice recipe for bound asparagus soup with sweet potato.
The white gold in the pan

My daughter Vive is unfortunately not a very easy eater, but she always likes soup in one way or another. Whatever color the soup is, she doesn't care. You draw a delicious broth from the bottoms and the skins, which then form the basis for your soup. I often use the 'misfits' to make the soup. Vive and I made an asparagus soup with sweet potato together. Stirring into the soup is the highlight for Vive while cooking. And secretly for me too. Such a beautiful smooth creamy white soup is a sight to behold. With this recipe below you can also conjure such a delicious soup on the table. A boiled egg and chicken strips complete it all and also provide some extra protein.

- 500 gram asparagus
- 2 shallots
- 2 vegetable stock cubes
- 1 sweet potato
- 1 ltr water
- 50 ml whipped cream
- 2 eggs
- 100 gram cooked chicken strips
- oil for baking

And this is how you make it:
- Cut off the ends of the asparagus and peel the asparagus. Add the butts and peels to a pan with the water and stock cubes. Bring it to a boil and let it cook for 30 minutes.
- Meanwhile, peel and finely chop the shallots. Peel the sweet potato and cut it into cubes. Cut the peeled asparagus into 2 cm pieces.
- Then pour the drawn stock through a sieve. Collect the liquid in a bowl.
- Heat some oil in the pan and fry the shallots, sweet potato cubes and asparagus pieces briefly. Then add the stock and whipped cream. Bring it all to a boil and let it simmer for 15 minutes.
- Then puree the soup completely with the immersion blender. All threads and pieces must be ground into a smooth, even soup.
- Ladle the soup into bowls and garnish with a boiled egg, chicken strips and herbs.
