We start with the eggplant, cut them into long slices about a centimeter thick. They will flatten out a bit during grilling. I did not use the two outer slices, they were just a bit too thin.

Brush the slices with some olive oil and sprinkle them with some sea salt, pepper and za'atar herbs. Then grill them on a griddle or in a grill pan. about 3 minutes on both sides until they have nice grill marks. Set aside until use.

Cooking the sushi rice

The filling consists of sushi rice. I can be very brief about this: I followed the exact directions on the suit. I used half a pack. After it was done I added 2 tbsp rice wine and 2 tbsp rice wine to the rice so that it remained a little moist.

Chop the parsley and mint very finely, and finely chop the shallot as well. Add this to the rice and mix it all together.

Take the aubergine slices and scoop about a tablespoon of rice on top. Then carefully roll up and place on a plate. Repeat with the rest of the aubergine slices. So you may have leftover rice.
