Recently I received a bowl of vegetarian meatballs. I'm not really a big fan of meat substitutes because they are often simply not tasty. And of course there is a dispute about taste, but often it is just not. And then I give up, I'd rather go for the "real deal" than eat something that doesn't taste good. Nevertheless, these balls fell well here at home. And as far as I'm concerned, the secret is in: smother! The balls are quite hard straight out of the package. Not the soft stuff you know from the regular slow braised meatball. Braising these balls in a sauce softens them and absorbs the flavor of your sauce. And that came out well with this avocado toast with chestnut mushrooms. We let them smother in sake and soy sauce and you can taste that! In my opinion, these vegetarian meatballs are the best meat substitutes out there, especially if you let them simmer for a long time and maybe even leave them in the fridge overnight. My husband totally agreed with this and enjoyed it as much as I did. The first time I made them I served them in satay sauce and he didn't even realize they were vegetarian. So there are definitely tricks to make them super tasty!

The secret to these delicious meatballs is that they're packed with flavorful herbs and spices. Simmering them for a long time concentrates the flavors and gives the balls a delicious texture. Giving them time to cool and rest in the fridge makes the taste even better.

You need:

Ingredients:

  • 400 gram small chestnut mushrooms
  • 1 bowl of vegetarian meatballs - ( from the Meatless farm )
  • 1 avocado
  • 1 citroen
  • 3 spring onions
  • 1 Burgundian bake-off bread

And this is how you make it:

  • Clean the mushrooms and cut off the bottom of the stem.
  • Take your frying pan and add some oil. Fry the mushrooms for a few minutes and then add the meatballs. Raise the heat to high and deglaze with the sake, then add the soy sauce. Lower the heat and let it simmer for 15 minutes.
  • Meanwhile, mash the avocado with a pinch of salt and pepper and the juice of half a lemon.
  • Bake the bread in the oven according to the instructions on the package.
  • Cut the spring onions into rings.
  • Spread the avocado on the sandwiches, scoop some mushrooms on top and place the balls on top. Rather smaller, cut them in half. Sprinkle some spring onions on top.
