Ingredients:
- 4 tablespoons cornstarch
- 200 gram granulated sugar
- 375 ml blood orange juice
- 3 egg gels
- 80 gram butter

And this is how you make it:
- Take your saucepan and add the sugar, cornflour and blood orange juice. Bring to a boil, stirring, until it thickens and bubbles.
- Put the egg yolks in a bowl (you can use the egg whites for meringues). Pour in half of the bubbly sugar mix and stir it all the way through.
- Then add it back to the saucepan and keep stirring until everything is well mixed and thickened. 2-3 min Then remove the pan from the heat and add the cubes of butter and keep stirring until they are completely dissolved.
- Pour or scoop the curd into your glass jars.
- The curd will keep for a few days in your fridge.
