Ingredients:

  • 70 gram flower
  • 60 ml water
  • 60 ml Full Milk
  • 60 gram butter
  • 2 eggs - size M
  • ¼ tl salt
  • powdered sugar - to sprinkle on the puffs

For the filling:

  • 2 el granulated sugar
  • 1 bag of knock fix
  • 250 ml whipped cream
  • 250 gram mascarpone

And this is how you make it:

  • Preheat your oven to 180 degrees and line a baking tray with baking paper.
  • To work clearly, you first measure all your ingredients, then you can quickly continue working. Take your pan and pour in the milk, water, and salt, add the butter and melt the butter over medium heat.
  • Once the butter has melted and the milk is boiling, remove the pan from the heat and add the flour, spatula or stir well, then return to the heat.
  • Bake the dough for a couple of minutes, stirring, until you see that some fat is coming out of the dough.
  • Grab your bowl and scoop the dough into the bowl, first break 1 egg and beat it through the dough with a whisk until all the egg is incorporated. Repeat this with the second egg and then scoop the dough into a piping bag.
  • Pipe small dots on the baking paper, I took about 25 from this amount. Wet your finger and flatten the tips of the dots. Make sure there is some space between the two puffs because they expand during baking. Bake the puffs for about 25 minutes until done and golden brown.
  • Let the puffs cool on a baking rack.
  • While the puffs are baking, we make the whipped cream. Put the unbeaten cream in your mixer with the mascarpone, the sugar and the whipping fix and start on low speed, when the mascarpone becomes lobed, beat the whole into a thick lobed cream. Spoon into the other piping bag and store in the refrigerator until use.
  • Poke a hole in the bottom of the puffs with a knife and insert the piping bag and slowly pipe the puffs full of whipped cream.
  • You can sprinkle powdered sugar over them before serving.
