Mind you it's my version of a ratatouille. So I added vegetables and flavors that I personally like. Big advantage, you eat a lot of vegetables, and there is some left over then you can easily freeze it, or you can make a soup out of it!

Ratatouille is a classic dish that consists of a mixture of vegetables, such as eggplant, zucchini, peppers and tomatoes, which are gently cooked with spices and oil. The result is a tasty and healthy side dish or main dish.

As with so many basic recipes that have been around for a long time, the origin can no longer be traced exactly. It is basically a typical French-Provençal dish. But there is also a Spanish Chef who claims that it is descended from a Catalan dish. You can eat ratatouille hot or cold. If you run the dish through a food processor, you get a kind of vegetable spread that you can spread very well on a piece of baguette with, for example, some Parmesan cheese, or goat cheese on top!

You need:

Ingredients:

  • 1 zucchini
  • 1 Eggplant
  • 1 rode p
  • 2 witte onions
  • 3 cloves Garlic
  • 3 mature tomatoes
  • 150 ml past
  • 2 el capers
  • 2 el black olives in rings
  • 2 el Persillade (spice mix)
  • salt
  • peper
  • olive oil

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Cut or chop all vegetables into small cubes.
  • Take the frying pan and add a splash of olive oil. First fry the chopped onions until translucent and add the chopped garlic cloves. When they start to smell, add the chopped vegetables. Turn it all around well.
  • Reduce the heat to low and add the passata, herbs, capers and olives, then let it simmer for about 25 minutes with the lid on the pan at an angle.
  • Stir every now and then, when the vegetables are soft, scoop it into a bowl and it's ready to serve.
  • Delicious bites!
