The oliebollen recipe has been around for several centuries. Incidentally, they used to be called oilcakes, it was not until 1868 that the term “oliebol” was included in the Van Dale. The origin of the orb is somewhat disputed. Because although a Dutch tradition, most likely taken by Spanish and Portuguese Jewish Sephardim who fled to the Netherlands during the Spanish Inquisition.

Ingredients:
- 150 gram currants
- 250 ml semi-skimmed milk
- 1 bag dried yeast - (7 grams)
- 300 gram flower
- 1 el sugar
- 1 ei - knocked loose
- powdered sugar
- sunflower oil or peanut oil

And this is how you make it:
- Soak the currants in some water for XNUMX minutes, then drain and pat dry.
- Fill your deep fryer with the oil (up to the indicated height in the pan, usually 2 liters). When you are going to bake, heat the deep fryer to 180 degrees.
- Heat the milk in a pan until it is lukewarm.
- Take a small bowl and add the yeast and sugar and pour in 100 ml of milk. Let stand until it starts to foam.
- Take the large bowl and put the flour in it, make a well in which you put the yeast mixture, the beaten egg, the 150 ml milk and a pinch of salt and beat until smooth. Add the currants and stir well again.
- Cover the bowl with a damp tea towel and let it rise for an hour at room temperature. The volume should definitely be doubled.
- Heat your fryer, with two spoons that you dip in water first, scoop some batter into the fryer, you can also use an ice cream scoop.
- Turn them over with a slotted spoon and don't put too many balls in your deep fryer at once.
- Let drain on a paper towel and then eat with icing sugar!
