-Take your ham from the fridge to let it come to room temperature.

Take the olive oil and rub the whole ham with it, so that the olive oil is well absorbed and can give a rich flavor. Then sprinkle it generously with celery salt and pepper to let the herbs soak in well. Peel the garlic cloves carefully and cut them into light slices, and cut the fat of the ham a little to let the flavors penetrate better. Stick the garlic in there for extra flavor. Let it marinate quietly in the refrigerator for a few hours, so that all the flavors can merge well. Then you can prepare the ham as desired and roast it until it is perfectly done.

- Preheat your oven to 175 degrees

- Keep in mind that the ham on the bone needs an average of 10 minutes per 100 grams in the oven to be cooked.

-Then take a baking dish and pour a generous amount of olive oil on the bottom. Also place a few sprigs of fresh rosemary and thyme in there for an extra dimension of flavour and place the deliciously peppered ham on top. Clean a few juicy shallots, cut them in half and place them in the dish with them, so that they can fry along and release their aromas.

-Put the dish in the oven and bake the ham for about 60 minutes, basting the ham every now and then with the liquid from the bottom of the dish.

-When the ham is ready, take it out of the oven and let it rest in aluminum foil for 10 to 15 minutes before slicing. We make a tasty gravy from the remaining liquid in the dish.

-Pour the liquid through a sieve into a saucepan and add 3 tablespoons of red port. To bind the gravy, make a cornmeal paste and pour this into the pan, keep stirring until it is thickened.

Finally, trim the fat from the ham. (If you still bought a ham with the fat on it of course) and then cut it into nice thin slices
