Steak with homemade herb butter

Ingredients:
- 1 steak - of good quality / provenance
- potato slices
- small green asparagus
- 1 big onion
For the butter you will need:
- 250 gram unsalted butter
- 2 tl sea salt
- 1 tl peper
- 4 finely chopped dried tomatoes
- 4 el Parsley
- 1 finely chopped shallot

And this is how you make it:
- First we make the herb butter. Take a bowl and mash the butter in it. Make sure your butter is completely soft and at room temperature, otherwise this will be a very complicated job. Add all the ingredients from the list and mix into the butter. Then put it on a piece of foil and roll it into a roll. Then it can go back in the fridge to set further before use.
- I baked the potatoes in this recipe in the Aerofryer. You can of course also bake them in the pan, oven or deep fryer, but just what you prefer.
- Remove the steak from the refrigerator at least 30-60 minutes before cooking. Cover and let it come to room temperature. This will ensure even cooking. Pat the steak dry with kitchen paper. Sprinkle generously with salt just before cooking (add pepper only after cooking to prevent burning)
- I slowly caramelized the onion in some butter. You can also bake it on the grill if you want.
- In principle, you can give your butter every imaginable flavor with different herbs.
- Heat a grill pan (or heavy-bottomed frying pan) over high heat with a dash of oil or butter until very hot. Place the steak in the pan (not too much at a time). Grill/fry depending on thickness and desired doneness (e.g. 2-3 minutes per side for medium-rare at 2-3 cm thickness). Use tongs to turn, do not prick with a fork. Remove the steak from the pan and let it rest for at least 5 minutes under aluminum foil. This ensures that the juices redistribute and the meat remains tender. In the meantime, grill the green asparagus briefly. Serve the steak with the caramelized onion, asparagus, potatoes and a generous slice of homemade herb butter to melt on top
