And this is how you make it:
- Chop the shallots and press the garlic.
- Put some olive oil in the frying pan and fry a dozen whole sage leaves until crispy in the pan. This only takes a few seconds! Let them drain on a kitchen towel. Chop the rest of the sage leaves very finely.
- Add the shallot and garlic to the skillet and cook until translucent, then add the chopped sage and bay leaves. Deglaze with the wine and add the stock. Now let the whole boil down to 1/3.
- When it has boiled down, add the cubes of butter and with a whisk you beat the whole into a nice soft sauce. Remove the bay leaves. Season with pepper and possibly some salt.
- Sprinkle your steaks with salt and pepper and fry them in another frying pan to the desired doneness.
- Let the steak rest for a while before you cut it into slices or serve the whole steak.
- Place the meat on preheated plates and pour over the sauce.
