Ingredients:
For the vinaigrette you will need:
- 50 ml olive oil
- 20 ml juice of boiled beets
- 40 ml Red wine vinegar
- 20 ml hazelnut oil
- 1 el honey
- 1 tl chopped hazelnuts
- 1 el fresh parsley - chopped
- sea salt
The fresh herbs for herb salad:
- fresh tarragon
- fresh chervil
- cress
- fresh parsley
- fresh chives
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Mix the chopped beets, cornichons, shallot, capers, mustard, herbs and olive oil together and season with salt and pepper.
- The vinaigrette: Mix the vinegar with the honey and beetroot juice, sea salt and pepper and then mix in the oils while stirring, finally adding the hazelnuts and herbs. The oil will float to the top so shake again before serving.
- Select 8 beautiful firm lettuce leaves, with two spoons you form a "quenelle" of the beetroot tartare and place it in the leaf.
- Place on a nice plate and spoon some vinaigrette around the lettuce.
- Place a sprig or some leaves of each of the fresh herbs on the tartare.
