Beetroot dip with garlic bread
Daylight saving time. The BBQ works overtime, we eat outside and enjoy with family and friends. -We first make the dip so that all the flavors can soak in. You can cook a beet yourself, but for example a boiled one biet buying is just as easy.
- Cut the beetroot into cubes and then put it in a food processor, together with the fresh goat cheese and the parsley sprigs. Season with freshly ground pepper and, if desired, some salt. Pulse or grind until it is a smooth mousse. It doesn't have to be ground completely smooth.
- Then spoon the whole thing into a bowl and sprinkle some slivered almonds on it, the dip is now ready, you can put it in the fridge until use.

- Cut the fresh baguette into elongated slices.
