Every year when I do it Christmas dinner I will of course start preparing well before Christmas. That means by the time it actually is Christmas, everything will be in the picture and tasted good! A beetroot dinner for me means unpacking. A minimum of four courses, and perhaps also an amuse-bouche and a cheese board afterwards… We will lose weight again in the new year with the well-known good intentions. And if you use those handy cooking rings, you can get a nice one by not choosing the largest one dish to make. This way you can enjoy a very extensive dinner, with many courses, without actually being full after the starter.

Beetroot tartare with mackerel fillet
Beets like in this one beetroot tartare with mackerel fillet are available all year round. This is because there are different types of cultivation. Very early, early, summer crop and autumn crop. As a result, you will always be able to buy them at the supermarket or at your greengrocer. The combination of the beets and the mackerel go very well together. It is a nice fatty fish that is very healthy for you.

The herbs/spices you see on the plate are Dukkah. I have written a blog about this before because you can easily make and save this yourself. A delicious mix that you can use with beetroot with mackerel and many other dishes, as decoration, to give flavor and as a dip with some olive oil and some good bread. Ingredients:
- 1 tray sliced beets - (400 grams, but we use a little less)
- 200 gr mackerel fillet
- 5 pickles
- 2 el capers
- 2 shallots - finely chopped
- 2 el mayonnaise
- 2 el dukkah - for decoration on the plate
- 1 el White wine vinegar
- 1 tl Worcertershire sauce
- Parsley
- 4 hairdresser apples - for decoration on the plate
- salt pepper
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- I chose boiled and sliced beetroot in this recipe because it is easier and faster, of course you can always cook and cut your beetroot yourself.
- Chop the shallots very finely, cut the gherkin into small cubes, finely chop the capers. Put everything in a bowl. Add the mayonnaise, white wine vinegar, Worcestershire sauce and season with salt and pepper. Mix it all together.
- Place the cooking rings on the plates and spoon in a layer of beetroot starter and press down well.
- Break the pieces of mackerel fillet and put it on the beetroot, pressing a little.
- Garnish with the dukkah and the caper apples. Carefully remove the rings and serve.
