Beetroot salad with caramelized nuts

One word for this salad is enough: Fantastic! Really all flavors come together and with the homemade dressing..... A real party on your plate. Bettine's goat cheese balls also help with that, of course. I got that bowl during an event so I now sprinkled them on this beetroot salad with caramelized nuts. I looked for a way other than using sugar and found it in honey. Together with some olive oil the perfect mix to get delicious sticky nuts. For example, sprinkle some coarse sea salt on it and you will never want anything else…

And this is how you make the beetroot salad with caramelized nuts:

-We're going to make the nuts first. It's super easy and doesn't take very long. Take a bowl and add the 3 tbsp honey and 2 tbsp olive oil. Mix this together until you have a smooth sauce. Put a frying pan on the stove and heat the pan. Then pour the contents of the bowl into the pan. Shake the nuts in the pan and with a spoon you ensure that the nuts get a nice layer.

Allow the nuts to caramelize slowly over low heat. When the moisture has evaporated and the nuts are nice and sticky, shake the pan empty on a sheet of baking paper. Note the nuts are very hot! So don't put one in your mouth because you burn your tongue... Let them cool down until use.

-Clean the pan and fry the bacon until crispy.

- Cut the beets into pieces or slices.

Prepare the salad:

- Then take a nice large bowl or plate and first place a layer of washed spinach on it. Drizzle some dressing on this. Finish the salad with all the other ingredients.
