The idea for this recipe comes from fellow instagrammer Denise of My beauty Health lifestyle. She baked a larger cake in one spring form. However, I think this amount per pancake is fine for my macros that I need. Because they can also be stored in the fridge for a day or two this way, it's an easy prep!

You need:

mini quiche tins
satay picker

Ingredients:

  • 4 el oatmeal
  • 1 ei
  • 1 banana
  • 1'' el cottage cheese
  • 1 tl baking powder
  • 100 gram blueberries
  • 1 tl cinnamon
  • powdered sugar
  • 10 gram butter

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Put all ingredients except the blueberries in your blender and whirl until you have a nice batter.
  • Preheat your oven to 200 degrees.
  • Butter the quiche molds and divide the batter over the 4 molds. Sprinkle the blueberries on top of the batter.
  • Place the molds in the oven for 20 minutes or until cooked through. (check with a skewer). It may be that the top is getting too brown then lower the temperature to 180 degrees.
  • Remove the molds from the oven and carefully push the edge loose and then shake the "pancakes" out on a grid and turn them over again.
  • You can eat them warm, but also let them cool down and take them to work.
  • Serve with some powdered sugar.
  • Delicious bites!
