Blueberry banana oatmeal pancakes

Estimated reading time: 3 minutes

There is pancakes in the title of this recipe, but actually they are more like cakes or tarts. And then reasonably “moist” as it is called. The inside is still a bit moist and the pancakes are soft. We bake these blueberry banana oatmeal pancakes in the oven. We use quiche molds for this. You may be thinking “Francine you don't like a banana, do you?” Yes that's right! But I have to say that I don't really taste it in this recipe. And with a lot of icing sugar on top, it is quite a treat…

The idea for this recipe comes from fellow instagrammer Denise of My beauty Health lifestyle. She baked a larger cake in one spring form. However, I think this amount per pancake is fine for my macros that I need. Because they can also be stored in the fridge for a day or two this way, it's an easy prep!

  • 1 banana
  • 1'' el cottage cheese
  • 1 tl baking powder

And this is how you make it:

  • Preheat your oven to 200 degrees.
  • Butter the quiche molds and divide the batter over the 4 molds. Sprinkle the blueberries on top of the batter.
  • Place the molds in the oven for 20 minutes or until cooked through. (check with a skewer). It may be that the top is getting too brown then lower the temperature to 180 degrees.
  • Remove the molds from the oven and carefully push the edge loose and then shake the "pancakes" out on a grid and turn them over again.
  • You can eat them warm, but also let them cool down and take them to work.
  • Serve with some powdered sugar.
  • Delicious bites!
