It was time for a nice dessert again. And that too! This blueberry blackberry jam tiramisu is easy to make and can also be prepared a day in advance. You need long fingers for this kind of dessert. You can buy them in the supermarket, but I find the Dutch ones a bit too narrow and too hard. You can buy savoiardi at the Italian specialty store, online, or at your wholesaler. So those are long fingers but a bit wider and a bit softer. They absorb the juice of the jam well and become nice and soft, but not too soggy.

Is this really a tiramisu? Hummm, no, not really, but in terms of appearance and structure it certainly is, so I gave it that name anyway. The beautiful purple color of the mascarpone whipped cream is due to the blueberry juice. It just gives it a nicer look. Of course you can store the rest of the jam in the refrigerator and, for example, spread it on a rusk.

You need:

glass jars

Ingredients:

  • 250 ml whipped cream
  • 250 gram mascarpone
  • 75 ml blueberry juice
  • 2 el erythritol - (sugar substitute)
  • 20 savoiardi biscuits - (long fingers)
  • 12 blueberries - for decoration
  • 1 bag knock fix

For the blackberry jam:

  • 250 gram blackberries - (freezer box)
  • 1 el cornstarch - (mixed with 1 tbsp water)
  • 100 ml blueberry juice
  • 2 el erythritol - (sugar substitute)

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • We first make the "jam", put the blackberries in a saucepan with the berry juice and 75 ml of water and bring to the boil. Let it simmer gently until all the blackberries have fallen apart. Add the erythritol and cornstarch and use a whisk to whisk it well into the jam that is slowly forming. Then let it cool in the pan.
  • In a food processor, first loosen the mascarpone and make it lumpy, then add the whipped cream, erythritol, blueberry juice, and whipping fix and beat until you get a nice thick, lumpy whipped cream and put it in a piping bag.
  • Take the glasses and first spoon a layer of jam into them, break the ladyfingers into small pieces and stick them in the jam and then pipe dots of whipped cream on top. Repeat this layering process again until the glasses are nicely filled. Place in the refrigerator for about 3 hours.
