This is a nice fresh dish! The slightly sweet and sour of the pineapple and also the spiciness of the curry. This cauliflower pineapple curry with chicken is a nice combination of vegetables with fruit. I fried the chicken in this dish in wok oil. This oil has an oriental touch and this goes well with the flavors of the curry. You can serve it with rice but I chose a naan bread. I really like this myself and you can dip it in the sauce. And this is how you make the Cauliflower pineapple curry with chicken:

- Cut the chicken breasts into cubes and take a frying pan with them. Heat some wok oil and then fry the chicken breast cubes until golden brown. Sprinkle some salt and pepper to taste them. Then set them aside.

- Then cut the cauliflower into small florets and the yellow bell pepper into pieces. Now take a deep frying pan or snack pan and add the vegetable stock and coconut milk. Then add the cauliflower florets and the bell pepper and bring to the boil. Then add the turmeric and curry and let it cook for about 5 minutes on high heat.

-To bind the sauce, add the cornmeal paste and stir it well, if it is still too watery for your liking, add another paste until it is bound.

-Finally add the pineapple cubes and let them simmer for a while to warm them up nicely.

-Turn on your oven to 200 degrees and bake the naan buns for 4 to 5 minutes. (You can also make them yourself if you have a little more time)

Ingredients:

  • 300 gram chicken breast
