Suus from Suzies Cheesestories gave me a nice piece of cheddar. You often immediately think of that super yellowish/orange piece cheese what's on your burger. But nothing could be further from the truth in this case, because this is a vintage reserve cheddar. This cheese has been made since 1833 by the Barber Family in Somerset England. And there they developed a method that gives it a distinct texture, different from the other cheeses. This cheese is also soft and creamy and was a real surprise for me. Suus was very curious what I would make with it and so these cauliflower burgers with Cheddar. A funny twist on the normal burger with its slice of cheese. vegetarian burgers cauliflower

And this is how you make the Cauliflower burgers with cheddar:

-First clean the cauliflower, then cut it into smaller pieces. Put this in the food processor and grind the cauliflower until you get a kind of rice. If you don't have a food processor, you can also chop the cauliflower very finely with a sharp knife. Chop the garlic cloves very fine and add them to the cauliflower.

-Take a grater and grate the cheddar completely fine. You can also do this with your food processor again, but the cheddar is very soft so I thought it was better to do this by hand.

- Grab a large bowl and put the Cauliflower with garlic, the grated cheddar and the breadcrumbs. Season to taste with some salt and pepper. If you want a spicier burger, add some chili flakes. break the eggs over the bowl and stir with a wooden spoon until you get a thick mass. Then knead it all together well with your hands.

Shape the dough into burgers to the size you want them to be, don't make them too thick.

-Fry the burgers in a frying pan with some olive oil until they are nicely browned.
