Cauliflower is eaten here regularly at home. My daughter likes it very much, but be careful with no frills. So just boiled florets and a little salt on them and nothing else! I myself like to look for some more possibilities with these vegetables and you will find them in these cauliflower crispies with pesto barley. And actually everything is better with a nice crispy jacket around it, right? Think of shrimp, or chicken nuggets for example. The olive wood mortar and the plank are two gifts I bought during one of our trips to the South of France. When visiting a nice French market in a small village with the sun on the sphere, there was a nice stall with all kinds of beautiful olive wood articles.

We found one in the garden last year and man, what a noise that creature makes! The French salt and pepper shaker was a beautiful find, with delicate details reminiscent of the serene French country style. You need:

Ingredients:

  • ½ cauliflower in small florets
  • 200 gr barley
  • 5 el fresh pesto
  • bacon (optional)
  • 1 avocado
  • 2 eggs - scrambled
  • bread-crumbs
  • 2 el Persillade (spice mix)
  • olive oil

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Cut the cauliflower into small florets.
  • Take a baking pan and line it with a piece of baking paper. Prepare a bowl with the beaten eggs. In another bowl, put the breadcrumbs with the persillade. I used about half a packet of breadcrumbs.
  • Tip the florets into the bowl with the egg and make sure there is a layer of egg on all of them. Then you pass them one by one through the seasoned breadcrumbs and place them on the baking tin. Not against each other but just loose on the tin. Meanwhile, preheat your oven to 200 degrees. Gently brush olive oil on the florets.
    Nowadays you can also buy bottles of olive oil with a spray bottle, this makes it very convenient to spray the florets with oil.
  • Bake the florets in the oven for 25 to 30 minutes until golden brown.
  • In the meantime, make a fresh pesto (recipe at the bottom of this recipe card) and cook the orzo. When the orzo is cooked, add the pesto and mix it all together.
  • Cut the avocado into nice slices.
  • Spoon the orzo into the bowls and serve with the avocado and cauliflower florets.
  • Delicious bites!
-You can serve fried bacon with it, as I did, but if you don't want a vegetarian dish, don't.
