I have such respect for all parents, carers and helpers in the Netherlands who are currently there for our children. Being a lockdown mom is hard for me. Not being with the kids, because time flies by. Laughing, crying, frolicking or learning. But above all that I can no longer fulfill my own priorities. My working time has more than halved.

The feeling that my own life is currently on hold, I have to put aside. Go with the flow.

Ingredients:

  • 1 Cauliflower - in roses
  • 2 onions - XNUMX onion - shredded
  • 400 gram chickpeas - 1 can
  • 1 can of coconut milk
  • 250 gram self-raising flour
  • 250 ml yoghurt
  • 1 clove of garlic

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Preheat the oven to 180 degrees.
  • Cut cauliflower into florets. Peel and peel the onion and garlic and cut into pieces. Spread the cauliflower, onion and garlic on a baking tray and sprinkle curry powder over it. Drizzle some oil over it too.
  • Place the baking tray in the oven at 20 degrees for 180 minutes. If you don't have an oven, you can also stir-fry all vegetables for 7-8 minutes.
  • Mix the self-raising flour and yogurt in a bowl. Add any spices you like. Knead it into a dough ball. Make small balls about the size of a palm and flatten them. Heat some oil or butter in a frying pan and fry the buns on both sides for a few minutes.
  • Heat some more oil in a large pan or wok and add the vegetables from the oven. Add the chickpeas and fry for a few minutes.
  • Finally, add the coconut milk and heat for another 5 minutes.
  • Divide the curry between 4 plates and serve with the flatbreads.
