Cauliflower puree from the oven
My daughter is a big fan of cauliflower and loves to eat it simply cooked. But there are so many other fun ways to experiment with cauliflower! For example, a fantastic alternative to mashed potatoes is this delicious cauliflower mash from the oven. This puree has much less carbohydrates than mashed potatoes, but is just as tasty. I use buttermilk for this recipe. This dairy product used to be a by-product of small-scale butter production and is obtained by churning soured cream. In the Netherlands, buttermilk is mainly drunk as a drink in the summer, but it is therefore also very suitable for making a delicious puree. Cauliflower puree casserole with cheese.
And this is how you make the Cauliflower puree from the oven:
-First put on a pan of water and add the cauliflower florets and the three cleaned cloves of garlic. Boil them for 20 minutes until they are soft.
-While the cauliflower is cooking, grab a frying pan and fry the bacon strips in it. Fry them until they are completely crispy and then let them drain on a kitchen paper.
-Preheat your oven to 200 degrees.
When the cauliflower is cooked, drain it in a colander and let it drain well. Return the florets to the pan and add salt and pepper. Also add the buttermilk and a handful of chopped chives. Grab your immersion blender and blend it all gently into a puree.
- Grab your baking dishes and spoon the puree into it. Crumble the bacon on top, then sprinkle with the shredded cheddar cheese and shredded cheese and place in the oven until the cheese has melted. Finally, turn on your grill to give the cheese a nice color.
