Cauliflower soup with pink shrimp
This cauliflower soup making the recipe is very easy. Are you cooking another dish with fish? Then save the bones and heads, for example. You can later use this to make a nice fish stock with some fresh vegetables. If you make a whole pan, you can freeze it in portioned bags. But there is no shame in just using a block or a jar of fish stock. Shrimp often go on sale during the festive months.
This means that the whole soup does not have to cost that much. I bought the jar of herring caviar at Sligro in the fish department. If you don't have a pass yourself, you can always ask someone to take it for you. Moreover, it is important to mention that the cost of the soup depends not only on the herring caviar, but also on other ingredients you use. In addition, it can be useful to compare different stores to find the best price-quality ratio for herring caviar. Asking someone to bring it for you is a smart way to save costs if you don't have a pass yourself.

Ingredients:
- 1 Cauliflower
- 2 white onions
- 150 ml cooking cream
- 2 cubes of fish stock
- 4 el pink shrimp
- 4 tl herring caviar
- fresh thyme
- peper
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Chop the onions and fry them in a pan with a dash of oil until translucent.
- Cut the cauliflower into florets and add to the pan. Bake for a while.
- Add the stock cubes and 1 liter of water.
- Bring to the boil and let it simmer for 20 minutes so that the cauliflower is completely soft.
- Puree the whole with the immersion blender and then add the cream. Stir.
- Strip the leaves from two sprigs of thyme and add them to the soup, season with freshly ground pepper.
- Spoon the shrimps and caviar onto the soup and garnish with a few more thyme leaves and pepper.
