This salad is delicious as a healthy lunch, or perhaps as a side dish to your dinner with a nice piece of meat. You can also eat it cold or warm. Of course we make a nice dressing ourselves. You can keep this fresh vinaigrette in the fridge for a few days. Great for other days when you can make a different salad. This broccoli artichoke asparagus salad is vegetarian, but you can also make it vegan if you wish. If you are a meat eater, you can also add bacon or chicken pieces. So it doesn't really matter which way you want to go with it, it's a nice basic recipe that you can tinker with yourself.

Salads are one of my favorite dishes to make and eat. On my blog you can already find many salad recipes, for every taste and occasion. I like the variety and creativity that salads offer. You can make them as simple or as elaborate as you like, using whatever ingredients you like. This broccoli artichoke asparagus salad is an example of a salad I came up with with what I had lying around in my fridge. I had a head of broccoli, a jar of artichoke hearts and some green asparagus left.
I made a delicious salad with a homemade persillade dressing. I always like to have my vegetable drawer well stocked so I can always make something healthy. This way I avoid snacking on unhealthy things. Vegetables are not only good for your health, but also for your taste buds!

Broccoli artichoke asparagus salad

Ingredients:
- 200 gram lamb's lettuce
- 1 can artichoke hearts - leaked
- ½ Red onion - cut into strips
- 1 stump broccoli
- 6 green asparagus
- 50 gram Parmesan cheese
- 3 el pine nuts
- 10 black olives
For the vinaigrette you will need:
- 1 tl French mustard
- 3 el olive oil
- 2 el White wine vinegar
- 1 tl Persillade spice mix
- salt
- peper
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Remove the "woody" end of the asparagus and cut into 2 cm pieces, cut the broccoli into florets. Blanch them together in a pan of boiling water for a minute or 3/4 and then drain.
- Meanwhile, we make the vinaigrette, put all the ingredients in a measuring cup and beat with a whisk until everything is well mixed. Then put it in a glass jar or bottle. Let alone until use.
- Drain the artichokes and cut them into quarters.
- Toast the pine nuts briefly in a frying pan.
- Chop the red onion.
- Grab a bowl and put the lamb's lettuce in it, drip a little bit of dressing on it.
- Finish the bowl with the rest of the ingredients.
