I made it just a little spicier by adding a green jalapeño. Jalapeño is a type of chili pepper originally from Mexico. It is one of the most popular types of chili peppers and is often used in Tex-Mex and Mexican cuisine. Jalapeños are usually green, but ripen to a reddish color. They have a mild to moderate spiciness and a slightly fruity taste. They are widely used in salsas, guacamole, sauces, marinades and other dishes to add a flavorful spicy note. Jalapeños are also available in canned, smoked or dried form and can be used to add a spicy kick to a variety of dishes.

Funny thing always happens when I roast nuts or almonds: my daughter immediately walks into the kitchen to ask if I'm making popcorn. That is of course not the case, but apparently it smells just like that when I roast something in the frying pan.

Also with this salad, if you eat vegetarian, you only have to leave out the smoked chicken. Then just still a delicious salad. In my kitchen there is always a basil plant in the kitchen. I think it's best to add those leaves fresh. This is also a great zero waste recipe because if you have leftovers in your fridge, you can also add them to this salad.

Ingredients:

  • 1 bunch of broccoli
  • 200 gram smoked chicken fillet
  • 1 jar of artichoke hearts
  • 2 el capers
  • 1 jalapeño pepper
  • 2 el slivered almonds
  • 2 sprigs of fresh basil

For the dressing:

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Bring a pan with plenty of water to the boil and add some salt. Dip the entire broccoli stalk into the boiling water and blanch for 2 to 3 minutes. Then drain in a colander.
  • Cut the chicken breast into slices, the jalapeño into rings, and the drained broccoli into slices.
  • Toast the slivered almonds in the frying pan for a minute until they start to color nicely, then immediately remove them from the pan and scatter on a plate to cool.
  • Also drain the artichoke hearts and cut into thin strips.
  • Take your serving bowl and finish it with all the ingredients.
  • Take an empty jam jar or mixing bowl and add the olive oil, vinegar and a little salt and pepper and shake or beat very hard to a smooth dressing, pour over the entire salad.
