As a Foodblogger, we regularly attend events and often receive a personalized shelf. I really like this, of course, I now have a cupboard full of all kinds of wooden plates in all shapes and sizes. One of the boards I got was from Gwen from Bowls&Dishes. And this time I served it with a delicious bulgur salad with rack of lamb. A rack of lamb is a beautiful piece of lamb cut from the front part of the back of lamb. The piece is called rack of lamb because of the shape where the protruding ribs stand out. It is a relatively lean piece of meat with a fine structure. The rack of lamb can be roasted whole in the oven or in a frying pan, or you can cut the chops separately and fry them separately.

We are going to cook the bulgur first. Follow the directions on the package. Here it is stated exactly how much water and how many grams of bulgur you should use for 1 person.

While the bulgur is cooking, cut the peppers and feta into small pieces.

Heat a frying pan and fry the bacon until slightly crispy. Drain the fat into a separate container. Then add the bell pepper cubes and fry them briefly with the bacon. Add the drained bulgur and mix everything together.

Now we are going to grill the rack of lamb. Take a grill pan and heat it well. I bought seasoned rack of lamb at my Keurslager. This saves time and effort, because the rack of lamb is already deliciously flavored. If you are going to season them yourself, do this a day in advance so that all the flavors can absorb properly. For example, you can make a mixture of olive oil, garlic, rosemary, thyme, salt and pepper. Grill the rack of lamb until cooked through. I like rosé, so that means they don't have to be on it for too long. About 3 minutes per side is enough, depending on the thickness of the meat.

Finally, to finish the salad, take a deep bowl and put the lettuce in it first. Season with a few drops of olive oil. Then you scoop the bulgur with bacon and bell pepper on it and place your pieces of lamb on top. Finally, sprinkle the feta cubes and some fresh parsley on top for a fresh and creamy touch. and : Delicious Happen
