Mussels are so easy to prepare! You can often have a steaming bowl of mussels on the table within a few minutes. This time we are going to work with a pasta recipe. You can choose whether to make the pasta yourself, but buying it from the supermarket is also fine. One of my favorite pasta dishes is the “cacio e pepe” a classic. Nothing more and nothing less than pasta, cheese and pepper. And this time we also add mussels and my beloved herb parsley. A really nice dish with only a few ingredients. Cacio e pepe pasta with mussels
This mussel recipe is my first for a #musselchallenge The first challenge: how do you make a dish with a lot of flavor, that is also very easy to prepare? Many people think that it is difficult or takes a long time to make a delicious mussel dish, but the opposite is true. And they are also super healthy! In general, the cooking liquid from the mussels is thrown straight down the sink and that is a real shame!
The flavor of the mussels cooking liquid is so rich that it can be used as a broth. It is so tasty that no stock cube can compete with it. In fact, many star chefs will agree with me. This proves once again that you can make a top recipe with very few resources.
And as for the costs? A recipe like this cacio e pepe pasta with mussels is not expensive either. For only 6 to 7 euros per person you can eat at home as if you were eating in a top restaurant!

Ingredients:
- 1 kilo Zeeland mussels
- 300 gram pasta
- 100 gram grated pecorino
- 100 gram grated Parmesan cheese
- 100 ml White wine
- ½ el ground black pepper - from the pepper mill
- 3 el fresh chopped parsley - finely chopped
- 2 cloves of garlic
- 2 el olive oil
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Take the mussels and wash them well under cold running water. If necessary, also brush the outside of the shells. We are so precise because we will soon make stock from the cooking liquid.
- Take a large pan and add the olive oil and the garlic cloves in it. Add the mussels and turn the heat to high. Pour in the wine and cook the mussels for 5 to 6 minutes until the shells open.
- Take a fine sieve and place it in a large bowl, drain the mussels in it, we want to keep all that moisture!
- Remove the mussels from the shell and place them in a bowl.
- Meanwhile, heat a pan with water and salt and bring the water to a boil for the pasta.
- Grate the Pecorino and Parmesan cheese with a grater or microplane and add this together with 200 ml of the mussel cooking liquid in a bowl. Blend it all into a smooth sauce. (About half a liter of liquid comes out of the pan).
- Take a clean pan with it (or quickly wash the pan in which you cooked the mussels) and place on medium heat. Bake the ½ tbsp peppercorns from the pepper mill on the dry bottom until fragrant.
- Pour in 100ml of the cooking liquid and add the mussels. Drain the pasta and toss it into the pan and add the Pecorino-Parmesan mix as well. It may seem a little watery, but stir gently with tongs, the starch from the pasta will thicken your sauce. Add the parsley and stir well.
- Serve immediately and be surprised!
