Yes, come on with that sun and that beautiful weather! That means that you can eat a lot of salads again. And this Caesar chicken schnitzel asparagus salad is a winner. As the title says, the inspiration comes from the classic Caesar salad, we just add some other things to it. Like a nice crispy chicken schnitzel and I also had some green asparagus in my fridge. Zero waste, so just grill it and then serve it with the salad.

As it often happens with me, I once again forgot about the eggs… actually I wanted to make delicious soft-boiled eggs. But after a certain time I suddenly thought "hey how long have they been standing?". Guaranteed hard-boiled! But they certainly don't taste less because of that, so add eggs and enjoy.

This Caesar chicken schnitzel asparagus salad is still pretty basic! Not too much fuss, and you eat like an emperor ;-). But what makes this salad so special? That's mainly in the dressing. You can make it yourself with mayonnaise, yogurt, garlic, mustard, lemon juice and Parmesan cheese. A creamy and tasty sauce that goes perfectly with the crispy lettuce, the tender chicken and the fresh asparagus. Of course you can also use a ready-made Caesar dressing, but believe me: making it yourself is much tastier!

You need:

lettuce centrifuge

Ingredients:

  • 2 stumps romaine lettuce
  • 1 gun
  • 2 eggs
  • 2 chicken schnitzel
  • 6 green asparagus
  • 1 el olive oil
  • 1 el persillade spice mix

For the dressing you will need:

  • 3 el mayonnaise
  • 1 tl Dijon mustard
  • ½ citroen - squeezed
  • ½ tl salt
  • ½ tl peper
  • 1 el olive oil

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Preheat the oven to 200 degrees.
  • Cut the pistolet into cubes and drizzle the olive oil over it. Sprinkle with the persillade and bake in the oven until the cubes are golden brown.
  • Cut the ends off the asparagus and grill them in a grill pan with some oil.
  • Then fry the chicken cutlets in that pan or a separate frying pan.
  • Cut the lettuce and wash it well, then put it in the lettuce centrifuge and place on the plates.
  • In a measuring cup, mix all the ingredients for the dressing. Beat until you have a nice light dressing.
  • Boil the eggs hard or soft boiled as desired.
  • Drizzle some dressing over the lettuce and then top it off with all the other ingredients.
  • Delicious bites!
