Hola! Bring the Canarian sun into your home with this Canarian mojo prawn paella. Inspired by the islands, where fish and seafood are plentiful, this is a creative twist on the classic Spanish paella. We use leftover spicy mojo picón sauce (from the dads who raised their hands!) mixed with fish stock and saffron to cook the paella rice. Large prawns and a mix of seafood complete this flavoursome, colourful dish. A delicious way to use up leftover sauce!

I was looking for a way to use up the delicious mojo sauce I made. Mojo sauce is a typical sauce from the Canary Islands, made from red pepper, garlic, cumin and vinegar. It is a spicy and flavorful sauce that goes well with many dishes. I thought that rice would be a good base to work with the sauce. And what could be better than a paella with rice? We mix the mojo sauce with fish stock and cook the rice in it until it is soft and creamy.
That is already a delicious dish in itself, but we make it even richer by adding different types of seafood and large shrimps. This way you get a paella with a Canarian touch, full of flavor and color. Get started quickly with this Canarian mojo paella with shrimps!

Canarian Mojo Paella with Shrimp (Unique Recipe)
Mojo pican is the name of this spicy sauce. There is also a green version of it called mojo verde. It contains a lot of peppers and red peppers. This sauce gives the rice a nice color, but also the typical taste of saffron threads. These give an orange color to the broth.
This Canarian mojo paella with shrimps puts the sun on the table, and you can imagine yourself on the islands when you close your eyes. A paella recipe like this doesn't have too many ingredients, but it does have plenty of flavor!

And this is how you make it:
- Chop the onion and garlic and cut the bell pepper into small cubes.
- Heat the paella pan and pour in a good splash of olive oil. Fry the onion until translucent, then add the garlic and bell pepper and fry for a while.
- Add the saffron to the fish stock, put on a low heat so that it does not boil but remains warm. (The stock turns orange because of the saffron).
- Sprinkle the paella rice in the pan and fry for 1-2 minutes while stirring until the grains are translucent. Mix the mojo sauce with the warm fish stock (with saffron). Pour the stock into the rice in the pan. Stir well once to distribute the rice evenly. Now let the paella rest on medium/low heat for about 15-20 minutes until the liquid has almost been absorbed. Do not stir anymore (unless absolutely necessary to prevent sticking), this is crucial for paella!
- Preheat your oven to 200 degrees and place the large shrimps in a baking dish, pour olive oil over them and sprinkle some salt on the shrimps. Bake them in the preheated oven (200°C) for about 5-7 minutes, or until they are nicely pink and just cooked.
- When the rice is almost done and most of the liquid has been absorbed (after approx. 15-20 minutes of cooking), spread the seafood mix over the paella. If necessary, press them lightly into the rice. Let it cook for a few more minutes until the seafood is done. Season with salt and pepper.
- Place the shrimp on the paella and serve immediately.
- Delicious bites!
