Today I have a delicious summer recipe for you. A Caribbean pineapple carpaccio with white rum. This is a fresh and fruity dessert with a tropical twist. You cut the pineapple into thin slices and place them on a large dish or plate. Then you make a marinade of white rum, honey, lime juice and red pepper. You pour it over the pineapple and let it soak in for a while. The rum gives the pineapple a nice kick, the honey makes it sweeter, the lime provides freshness and the pepper gives it a kick.

Oh guys I've got another one for you guys! Well for the dads and the moms because we're going for the white rum. I made this delicious Caribbean pineapple carpaccio with it.

You need:

Mandolin
serving bowl

Ingredients:

  • 1 whole ananas
  • a number of fresh mint
  • 1 lime
  • 50 ml white Rum
  • 1 teaspoon piri-piric
  • 2 tablespoons granulated sugar

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • First cut off the head of the pineapple and keep it.
  • Then stand the pineapple upright and carefully cut off the sides of the peel. Then cut very thin slices. If you have a mandolin that is wide enough, you can of course cut it with that too. Watch your fingers!
  • Take a bowl and add the sugar and rum in it. Stir it all. Add the juice of the squeezed lime and mix.
  • Take a large plate or serving bowl and pour a little of the rum mixture on top.
  • Place the pineapple slices on top and then pour the rest of the mix on top.
  • Finally, sprinkle the piri-piri on top and some freshly chopped mint leaves.
  • You can cover it and leave it in the fridge overnight to really soak in. You can also serve it right away with some fresh ice cream.
