Carnival Zoervleisj with fries

Limburg zoervleisj is a Limburg recipe that can be prepared in many different ways. There may be some differences per region, one does it with gingerbread, the other only with apple syrup. Several chefs fall over each other to say that their recipe is the right one and nothing else. But I don't agree. Cooking should be fun and you can always start with a basic recipe to make it your own. That stays fun and that way you can taste something different! In principle you can eat and make zoervleisj all year round, but now that we are heading towards the carnival, I thought this was a nice one for the carnival recipes. “Zoervleisj” is a traditional dish from the Dutch province of Limburg, especially the region around Maastricht. It is often regarded as one of the region's most iconic dishes. The dish's origins date back to the Middle Ages, when it was prepared with cheap and tough cuts of meat that had to be cooked slowly to make them edible. The sour marinade was used to tenderize the meat and give it an intense flavour. Today, "zoervleish" is still widely eaten in Limburg and is popular in many restaurants and eateries in the region.
And this is how you make the Carnival Zoervleish with fries:
-First take a large bowl and add 300 ml water, 300 ml herbal vinegar.
-Take the meat and cut it into nice chunks of about two centimeters. Sprinkle the meat with freshly ground black pepper and salt. Clean the onions and cut them in half and then into half rings. Place the meat in the vinegar marinade along with the onions. Add the spices and then put in the fridge for at least 24 hours to marinate.
-The next day, drain the meat and onions. Save the liquid, we will stew the meat in it later. Separate the onions and meat. Dry the meat by draining it very well and patting it dry with a kitchen towel.
-In a casserole heat some butter and then put the meat in it. Brown the meat on all sides. This will take some time so take your time. If it gets too moist, you can drain it and add it later. When the meat is nicely browned, add the onions. You can warm up the marinade with the spices in it before you deglaze the meat with it.
-Put the meat on a simmering plate and let it stew for at least three hours. The meat should completely fall apart.
-After that time, add the crumbled gingerbread and the apple syrup and let it simmer for a while.
-If you really have too much moisture in the pan, you can always drain it a bit before adding the gingerbread and syrup.

Finally, bake some fries and serve them with the meat: Delicious bites and Alaaf!!
Tip: If you don't want to have to fish the spices from the dish, put them together in a tea egg that you can normally make tea with. This way you only have to remove the tea infuser and you don't have to look for all the loose cloves and bay leaves.
