I will never become a real baker I'm afraid, but every now and then I give it a try. If we have lunch somewhere or are in a diner, I will never order a carrot cake very quickly because I am not that fond of cakes. And to be honest, that white frosting isn't really my thing either. Why the carrot cake cupcakes from Sabine to make? Because she stated on her site that this was a healthy version, and a kind of chocolate flavored avocado frosting? I also make the recipe because this month I will again participate in a kind of food swap from various food bloggers, created by Mandy van Mandyandmore. By the way, it's on Sabine's site as a complete cake, my twist is that I made small cupcakes out of it, because it's mighty enough.

So Sabine is Portuguese and I have already met her a number of times at different events. A super sweet lady who fills her website and Instagram with Portuguese recipes, travel tips and other fun facts about this country. Now of course you would like to know what I thought of this recipe. I don't really like bananas myself and you can taste this quite well in the cupcakes.

So for me a different sweetener would be a better interpretation. Furthermore, the dough was nice and airy, and of course the mix of avocado and cocoa powder to make a frosting is a very good idea! Because they were cupcakes, they also remained tasty bite-size snacks.

- 140 gr almond flour
- 80 gr protein powder - (I bought at the Etos)
- 180 gr spelled flour
- 1 bag baking powder
- 2 el gingerbread spices
- 6 eggs
- 300 gr ripe banana
- 5 soft figs - (for sale at the Appie in bag)
- 360 gr grated carrot
- 70 gr walnuts - + extra for the topping
For the frosting you will need:
- 3 mature avocados
- 2 el cocoa powder
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat your oven to 165 degrees.
- Mix the top 5 dry ingredients from the list above in a bowl.
- In your food processor put the peeled banana, the figs, and the eggs and mix on a high setting until smooth.
- Then add it to the bowl and mix it all together well.
- Roughly chop the nuts and mix this with the grated carrot into the batter in the bowl. (You can buy grated carrot in bags ready-made, you can also grate the carrot yourself in your kitchen machine)
- Take the cupcake tin and put a mold in each compartment. Fill the molds with a spoon and place in the oven for 30 minutes. Check if the cupcakes are cooked by inserting a skewer, if it comes out without anything sticking to it, the core is good)
- Mix the avocado with the cocoa powder in your food processor until smooth, soft and place in a piping bag.
- Let the cupcakes cool down for a while before you pipe a swirl on them. Then you can finish it off by sprinkling some finely chopped walnut on top.
