Mushroom carpaccio with bacon and nuts

This mushroom carpaccio is really a surprisingly tasty appetizer! Super simple to make and it looks fantastic too. Mushrooms are often well cooked until they are brown or incorporated into a recipe. Because of this, they are just filler in another recipe. But with this mushroom carpaccio with bacon and nuts, they can be tasted in their full glory. Of course with a nice dressing. Drink a nice fresh white wine with it and you have a piece of summer on your plate.

And this is how you make the mushroom carpaccio with bacon and nuts:

-First clean the mushrooms well with a brush and then cut them into thin slices, then put them in a colander and pour boiling water over them. So make sure you have boiled enough water. Or use your Quooker, for example. Drain these slices well and then dry them carefully with some kitchen paper.

-Then you put them on the plates in a tile-like fashion.

-Fry the bacon in a frying pan until they are nice and crispy. Then wipe the frying pan clean with some kitchen paper and briefly fry the chopped Brazil nuts until they are lightly colored.

- Chop the shallot and finely chop the chives and set them aside.

-Finally, take all the ingredients for the dressing and put them in a bowl. With a whisk you beat it to a nice dressing. With a spoon, carefully drip some dressing over the mushrooms.

Finish the plates with the bacon, roasted nuts, chopped shallot and chives.
