I don't really need to mention in the title of this recipe that this is a salad. If you order a Chicken Ceasar somewhere you know that you are getting a delicious simple salad. To spice it up this time I added avocado and grilled chicken. You don't have to buy the croutons ready-made either, you can make these super easy yourself and sprinkle them fresh on the salad. And this is how you make the Chicken Caesar with avocado:
- Season your chicken the way you like it best, you can do this the night before so that the flavors infuse well into the fillet. Then cut the chicken into strips and place them on a grill plate or in a grill pan and grill until nicely cooked. Then take them off and let them cool a bit and tear them into slightly smaller pieces.
-Take the pistolet and cut it in the middle, brush the top and bottom with olive oil and sprinkle some salt and pepper on it. Then place them on your grill plate or in the grill pan and grill until crispy. Cut them into nice cubes with a bread knife. Half a pistol for each plate.
-In a food processor put all the ingredients for the dressing and pulse until you have a nice smooth dressing, put in the fridge until use.
-We wash the romaine lettuce and shake it dry, then we tear the leaves a bit smaller and put them in the bowl in which you are going to serve the salad, pour some dressing over it and toss well.
-In the meantime, boil the eggs, preferably soft-boiled, if you don't like that then just hard-boiled, finally cut the avocado through the middle, remove the pit and cut into slices.

And then finally, grab your bowls with romaine lettuce and fill them with the chicken, egg, croutons, and avocado slices. Drizzle everything with some more dressing and garnish with some shaved Parmesan cheese.
