The man who really needs no introduction, I think. The BBQ king of the Netherlands with many beautiful cookbooks to his name. I was invited to participate in an online workshop to barbecue with Jord. Of course you can't say no to that! A beautiful box was delivered at home with fresh products and his very last cookbook. Also a nice recipe card to prepare us for a nice meal. This chimichurri recipe gives you a good amount but you can keep it in the fridge for a few days for the next bbq session. Oh and do you now think that you have to get started with coal and smoking bbq's? During this workshop it became clear that it is also fine on a gas BBQ.
And with some participants even on a disposable bbq from the supermarket! So don't be limited, everything is possible!

- Don't clean your cast iron bbq grill every time as if it came out of the packaging… this makes the iron a bit greasy, but that's exactly what you want!
- When you turn the meat, don't put it back in the exact same spot, but a bit next to it.
- You can have a great BBQ on a gas BBQ, you don't need mega bastards.
- Provide high-quality products, leave the bangers for what they are, go for top quality.

Ingredients:
- 1 Red pepper - roasted / skinned / finely chopped
- 1 big red onion - XNUMX onion - shredded
- 2 tomatoes - skinned / pitted / cubed
- 2 cloves of garlic - finely chopped
- 2 el fresh chopped parsley - finely chopped
- 1 tl fresh oregano - finely chopped
- 2 el fresh coriander - finely chopped
- 1 jalapeño pepper - seeds removed / finely chopped
- 1 tl chili powder
- 1 tl smoked paprika powder
- ½ tl cumin powder
- 150 ml olive oil
- 1 lime - the juice of this lime
- salt
- peper
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- It's a long list for one sauce but definitely worth it! Get everything ready before you start and making it is not that bad.
- Chop and or slice ingredients as directed above.
- Heat your (gas) BBQ and place the peppers on top. We are going to grill the peppers until the skin is blackened and you can easily pull it off. Then take out the seeds, remove the skin and chop the flesh very finely.
- Take a glass jar and fill it with the rest of the ingredients. Mix well and let stand until use.
- Jord indicated that it is a fairly "wet" chimichurri. Delicious over a piece of bavette grilled on the bbq.
