We'll make the tomato sauce first. Peel the onion and chop it finely. Also cut the tomatoes into small cubes and chop the garlic clove. Put some olive oil in a frying pan and fry the onion until translucent, then add the garlic. Then add the diced tomatoes and mix well. Season with salt and pepper and the very finely chopped basil leaves. You can let the sauce simmer on a simmering plate while we make the rest.
-Get a bowl and add the minced meat, the egg, the chopped chorizo sausage, the chopped green olives and some breadcrumbs. Knead the whole into a firm minced meat mix. If it's too wet for your liking, add some breadcrumbs. Because the chorizo is very seasoned, we do not need to add any spices.
- Make small balls of the minced meat and fry them in a frying pan with some olive oil.
-Check the packaging of your pasta for how long you have to cook it and cook your pasta until done.
-When the pasta is ready, drain it and spoon it onto your plates, drizzle some olive oil over it and finish with the tomato sauce and the meatballs.
