Before the week starts I always like to make lists, shopping lists, to-do lists, to make sure they go completely according to plan? Erm, no, there is still some profit to be made. I come up with recipes that I want to make throughout the week, but sometimes things turn out a little differently and then something remains in the refrigerator, for example. This time it was some jars of cottage cheese. It would be a shame to throw it away, so I started working on these cottage cheese blueberry muffins. A tasty treat, and also keeps for a number of days. Cottage cheese blueberry muffins
In this recipe I use coconut blossom sugar, which is nevertheless just sugar. That doesn't necessarily have to be unhealthy as long as you don't eat too much of it. The taste of these muffins will certainly be different than you may be used to from a muffin. This type of sugar smells a bit like caramel and is dark brown in color. Gives your muffins a different taste than you may be used to with regular sugar. It's sweet, but not that sweet.

- 150 gram blueberries - rolled in flour
- 200 gram of cottage cheese
- 60 ml milk
- 60 gram coconut blossom sugar
- 60 gram coconut oil - molten
- 2 el cocoa
- 2 eggs
- 200 gram flower
- 1 tl baking soda
- ¼ tl salt

And this is how you make it:
- Preheat your oven to 180 degrees.
- Melt the coconut oil and whisk together the milk, sugar, coconut blossom sugar, eggs, salt and cocoa in a bowl. Then add the cottage cheese and mix again.
- Then add the flour and baking soda and mix, do not over mix!
- Sprinkle the blueberries in a bowl to coat them and then add them to the bowl.
- Fill a muffin tin with containers and spoon some of the batter into it, but not too full because the dough rises during baking.
- Bake them in the oven for about 25 minutes, check with a skewer.
- Let them cool on a rack and then enjoy!
