Zucchini is a versatile vegetable that you can eat raw, boiled or fried. At home I often use my spiralizer, which really makes preparing zucchini a lot easier. You simply choose the right blade, clamp the zucchini and turn the handle to create beautiful zucchini curls, thinly sliced and ideal for a fresh salad. That's how I came up with the idea for this zucchini salad with shrimp, a refined lukewarm combination. While the cheese sauce simmers gently on the stove, I fry the shrimp until they are perfectly pink and juicy. Put them together and you have a simple, yet eye-catching and tasty dish. Perfect for a light lunch or a refined dinner. This zucchini salad recipe is not only easy to follow, but also a guaranteed hit with guests.
And this is how you make the Zucchini salad with shrimp:
- First wash the zucchini well and then grab your spirelli device. If you don't have this, you can also slice long slices with a normal cheese slicer. Twist until you have nice zucchini curls. You then divide this between the two plates.
-Now make the cheese sauce, this is another very easy version. Simply make a roux with the butter and flour, then add the milk and keep stirring. Then add the grated cheese and keep stirring until it has completely melted, let the sauce simmer over low heat.
-And when the cheese is on low heat, we fry the shrimp. Take a frying pan and heat some olive oil in it, add the shrimps and the tablespoon of persillade. Bake them nice and pink and then they are ready.
