Vegetarian cooking with this bbq zucchini skewer. I don't do it very often because we just like to eat a piece of meat. But this zucchini spies with mozzarella is a nice change on the BBQ. To secretly give it some extra taste, I put a slice of dry sausage on the skewer… You can of course fill the skewer with all kinds of vegetables as you wish. The skewer with mozzarella does not have to be on the BBQ for very long. The mozzarella melts quite easily and grilling the vegetables not completely soft gives them a nice bite.

And this is how you make the zucchini skewer with mozzarella:
We'll start with the zucchini. Use a cheese slicer (or mandolin) to slice thin slices of the zucchini. Not too thin because you still have to be able to string them nicely.
- Then clean the peppers and cut them into small cubes.
- Cut the sausage into slices and finely chop the mint.
-I always work with containers that I put on the counter, I find that easy and works nicely well.

-Take the skewer and first thread a piece of sausage on it, it is nice and firm and so the rest stays in place. Take a slice of zucchini and thread it onto the skewer like a kind of harmonica. Fill the skewer with the bell pepper cubes, mozzarella and finish with the tomato. Drizzle over some olive oil and sprinkle with some freshly chopped mint leaves.
On the BBQ
Of course you have already lit your BBQ in time and it is nice and hot! Place the zucchini skewers with mozzarella briefly on the BBQ because the cheese will melt very quickly. If you do it right, you'll get them off just before you turn into those long strings of cheese.
Serve the zucchini skewer from the bbq with a nice piece of baguette and: Delicious Happen!
