Tarte (tart) tatin. I think it is a very nice cake to see and to make. Always a surprise when you turn it over. Of course I wanted to come up with a nice recipe and I thought I would make a zucchini tatin with brie. Now I had made a quiche with zucchini rolls before, but it was so wet… so unedible. Now, just like cucumbers, zucchini have a lot of moisture in them and that moisture has to get out of course. That was quite a job, but the end result is worth it! To work.

And this is how you make the Zucchini tatin with brie
So let's start with the courgettes first. These should be as dry as possible. I shaved long strips with a cheese slicer. You put this in a colander. (if you have a steam oven then you also have a container with all kinds of holes in it, this is also very handy here you just put the slices flat above your sink) Sprinkle salt over it so that the moisture pulls out. Leave them for half an hour.

- After half an hour, preheat the oven to 200 degrees. Pat the bars dry with a clean and dry tea towel. Then cut the strips lengthwise down the middle with a knife. Then roll it into small rolls and place it on another dry tea towel. This way the last moisture will get into the tea towel and out of the courgettes.
-Take a baking tin or quiche tin and line it with baking paper. Drizzle with some olive oil and sprinkle with the sugar. Then place the rolls with their colored side down on the sugar layer. Make a nice circle and keep the edges free.
- Chop the shallot and sprinkle it on the zucchini rolls and finally break off pieces of brie and place them on top as well.
- Finally, cover everything with the sheets of puff pastry that you have rolled into 1 large piece. Poke some holes in it with a fork.
-Place in the oven until the puff pastry starts to brown nicely, this can take 20 to 25 minutes.
-Finally, remove the tatin from the oven and place a plate on the puff pastry, if there is still some moisture in the baking pan, carefully drain it before turning it over. Turn it around and voila!
