Sometimes I get a request to come up with a recipe with a certain ingredient. The request for this time was chicory. Chicory is a tasty vegetable that is used in many ways, for example in casseroles or salads. This zucchini and chicory lasagna is a delicious oven dish that you should definitely try. Zucchini chicory and minced meat lasagna.
Bechamel sauce is a very easy basic sauce that can serve for many casseroles and also as a regular sauce with all kinds of vegetables and dishes.
And this is how you make the Zucchini chicory lasagna:
- First preheat your oven to 200 degrees
- Then cut the zucchini into slices with a cheese slicer. Sprinkle some salt on them and let them sit for 10 minutes to allow the moisture to drain from the zucchini. This makes the zucchini a little softer
- Cut a piece off the bottom of the chicory stalks, so that the leaves come loose, blanch the loose leaves for about 1 to 2 minutes in boiling water and let them drain well in a colander.
-Roll the minced meat in a frying pan and season the meat with salt, pepper and nutmeg. Then drain the fat in a colander and set it aside.
The bechamel sauce:
-Now make the bechamel sauce for the Zucchini chicory lasagna, you do this by first melting the butter in a saucepan, then add the flour and whisk until smooth. We call this a roux. Beat until the roux turns pale and starts to foam a little. Then add all the milk and mix well. Bring it to a boil, stirring until the sauce thickens. Now you can add the grated cheese. Again, stirring, make sure that it remains a smooth sauce. Add some salt, pepper, and nutmeg. Put the sauce on a stew and stir regularly so that it does not clump.
-Rinse the courgette slices with cold water and pat them dry.
-Take the casserole and with a gravy spoon you first pour a layer of sauce on the bottom.
- Top this layer with a few slices of zucchini. Spoon some minced meat on top, then a layer of chicory and then some sauce over it.
- This is how you build a chicory zucchini lasagna, it is recommended to lay the layers of vegetables horizontally and horizontally so that your stack is a bit stronger!
- Finally, cut the mozzarella ball into slices and place it on top. Sprinkle some nutmeg on this.
-Place the Zucchini chicory lasagna in the oven for about 20/25 minutes.
(If you want a slightly heavier meal, you can also add sliced boiled potatoes or lasagna sheets per layer).
Remove the dish with the Zucchini chicory lasagna from the oven and serve the lasagna with a nice white wine
