We're going to season the chicken first. Clean the fillets and cut them into thin strips and then sprinkle some persillade on top. Set them aside to marinate for a while.

- Take a large frying pan and add a tablespoon of olive oil. Fry the chicken breast strips until they are golden brown. Remove them from the pan and set them aside on a plate.

-Now put the tomatoes, the olives and the chopped garlic clove in the same pan so that the flavor and the herbs of the chicken soak into the vegetables. Stir fry for a minute and then add the zucchini. You really only bake this for a minute otherwise it will be way too soft.
