Until last year I seldom or never ate couscous. Why? I don't even know exactly. It is a bit strange because it is very tasty. And also handy if you want to make large quantities for a large group. This was the second salad I made during the goat event here in our village. Of course, this is another recipe that you can adapt and change to whatever you feel like, or even with the leftovers from your fridge. For the observant reader, this indeed resembles a Greek salad but with couscous and North African herbs!

We will of course start with the couscous, follow the directions on the package and cook the couscous. Drain in a colander and rinse with cold water. Then spoon into a bowl and mix in the ras el hanout and salt and pepper.

Clean all vegetables and cut into strips, slices. I removed the seeds from the tomato because otherwise you add more moisture to the couscous. Chop the olives finely along with the parsley.
